Why does chocolate sometimes have a white or gray look to it?
Real chocolate has a large amount of cocoa butter in its formulation that can separate from the other ingredients. The cocoa butter will rise to the surface when subjected to extreme heat, then when cooled; the surface of the chocolate can appear as looking a cloudy gray or white or have spots on it. This is what is known as "chocolate bloom". Bloom may cause the chocolate to lose its normal, creamy texture and flavor. The age of a product is not a factor regarding bloom. Bloom can happen on very fresh chocolate. We recommend that real chocolate be stored between 60-70 degrees. (source: NestleUSA)
Does chocolate have a lot of caffeine it in it? What about white chocolate?
The amount of caffeine (a naturally occurring substance and chemical in many foods) found in a chocolate bar is minimal compared to a cup (6-oz) of regular brewed coffee. Actually the amounts found in a chocolate bar can be closer to a cup of decaffeinated coffee.
For example a 1.55-oz Nestlé CRUNCH bar has less than 12mg of caffeine, a cup (6-oz) whereas a 6-oz cup of brewed coffee has between 65 and 150 mg of caffeine. (source: NestleUSA)
